Barrel Bites, the portable "cookie"

Barrel Bites

For when it’s the bottom of the barrel in your kitchen.


Ratio:

+ 1 Cup Shredded (carrot, parsnip, peeled sweet potato, apple)

+ 1 Cup Large Chunks (crushed nuts, dried fruit)

+ ½ Cup Small Chunks (seeds, dried fruit, chocolate bits, soaked sweet mushrooms)

+ ½ Cup Fine Bits (shredded coconut, almond flour, acorn flour)

+ ¼ Cup Dry Sweetener (granular monkfruit, sugar, erythritol, stevia)

+ ½ Cup Binding Flour (oats, ground flaxseed, all purpose flour)

+ 2 Tbsp Assorted Spices (cinnamon, nutmeg, allspice, spicebush, prickly ash, ginger, zest)

+ 1 Tsp Baking Powder


Binder - Choose One:

+ 1 Tbsp Psyllium Husk + 4 Tbsp Water mixed, 1 Egg

+ 3 Tbsp Psyllium Husk + ½ C Water mixed, + ½-1 C Water

+ 2 Eggs


Directions:

  • Mix, adding liquid as needed for mixture to be sticky enough to hold whatever shape you make. If it’s runny, add more “Fine Bits”, “Flour”, or a dry “Sweetener”.

  • Typically makes one sheet pan of 18 small mounds.

  • Bake at 350 for 15-20 minutes. Let them fully cool before eating.
