Service Description

Whole, salt-baked fish with herbs served over sauteed greens. Handmade pasta carbonara with optional mushroom mix-ins. Hosted by Julian Fortu, owner of Arcadia Venture foraged foods and graduate of the Culinary Institute of America, as well as home chef and shortcut expert, Elizabeth Davidson. In our February showstopper’s class you’ll learn how to make an impressive salt-baked fish using hardy herbs such as white pine, juniper and thyme. We’ll serve it over restaurant style sauteed greens and top with olive oil. You’ll also learn how to make pasta carbonara from scratch with a gluten free option, but you don’t need to have a fancy pasta maker! This will be a two course meal that you’ll enjoy serving for the rest of your life! In the week before the class we’ll send you your shopping list and prep instructions ahead of time. Once the class starts, we’ll walk you through how to make fresh pasta, how to salt-bake, and how to make a carbonara, including what swaps you can and can’t make. Then we’ll give you some instructions on how to plate your photo ready dishes that will impress even the most seasoned cooks. Each class is per-screen.
